Hatted restaurants are where Mark Henderson has spent a lot of working nights: Bistro Molines and Yellow Billy at Pokolbin, Margan's at Broke, and Sails at Lavender Bay on Sydney Harbour, plus a Tyrrell's Wines function catered by Muse Dining. Classical training shows on the nylon string guitar, which carries most of the night, and a Fender Strat comes out for livelier songs. Backing tracks come in or stay out depending on the mood, and it's mostly acoustic. The set might include Moondance, Under the Milky Way, Fields of Gold and Little Wing, plus originals written as Jimmy Moonunit. Mark brings a PA and needs power, a small table and a stool.
